Potatoes and Green Peppers with Cashew

2-3 large potatoes, cooked and skin peeled. Set aside
1 large green pepper cored and sliced.
½ onion sliced

½ tsp mustard seed
½ tsp urad dhal
1 clove garlic smashed
½ inch ginger peeled and smashed
Salt
¼ tsp turmeric
Handful of roasted cashew nuts unsalted

Or

Roast a handful of raw cashew nuts in 1 tsp of ghee
1 tsp Sambar powder (commercial powder is available at any Indian grocery store)
Cilantro for garnish
2 tbsp olive oil/ canola oil/walnut oil/grape seed oil _any will do. Make sure that you heat up the oil over low temps

Method

Heat oil of your choice in a non stick fry pan. Add mustard seeds and urad dhal. Cook covered for 1 minute or until you hear the mustard seeds pop. Add onions, ginger, garlic. Fry until the onion is translucent. Add cooked potato and sliced green pepper. Sprinkle with salt, Sambar powder. Cook until the potatoes brown slightly. Serve with toasted cashew and garnish with chopped cilantro.
