1 bunch fresh spinach. Washed and blanched in hot water. Drain and chop.
½ onion sliced thin
Salt to taste
¼ cup chick pea flour
3 tbsp rice flour
½ tsp dried chilies (save the chili packets you get with pizza)
¼ cup raw cashews
water
Oil for frying
Method
Combine all the dry ingredients. Add the spinach and onion and mix thoroughly. Check the salt. Add the cashew nuts. Add enough water to form a tight dough. In a deep pan or fryer, heat up the oil. Pinch bits of dough and drop into hot oil. Cook until the pakoras are crispy. Drain and serve
